Yummy Dosa....Nellore Dosa....Venkata Ramana Hotel Dosa

Hello Readers,
How are you all doing?? Its a relaxed saturday where I am taking rest from head to heels. This gives lot of energy to have a loaded weekdays. Sometimes,, feeling tiered of having regular meals or items. One item alltime favourite for everybody from a 2 year old kid to 70 year old uncle is none other than DOSA......They are so yummy and tasty. I already got a name of DOSA QUEEN in my family. This Dosa is 365 days available at my home. IF you are happy, sad, moodoff,mood on.............whatever is your state of mind, one item that goes well with a simple chutney or avakai or anything is just an Yummy DOSA. I feel so proud of having such name because I am a Dosa Fan.

Let me take you to a glance of DOSA preperation.

1. 1 cup Urad dal aka Minapappu
2. 3-4 cups rice.
The more rice is, the crisp the dosa will be.

Just grind both of them thoroughly with a grinder. Mixie dosas also good but grinder dosas are much more tasty. This is the simple trick that we get hotel style dosas.

Take a laddle of batter and pour it on Flat Pan(Penumu in Telugu). Spread it evenly. Pour 1 -3 spoons oil for a dosa depending on your oil liking.
In 2 mins, your dosa will be ready. This goes well with any chutney.
Try it out!!! Though this is a basic style, we can have variation in it.

Along with this we can add some vegetables like Cucumber,Sorakaya etc.

Venkata Ramana Hotel Idly!!!

Hello Readers, One more Basic food of any south Indian family everyday morning, here you go!! Idly- This is a white colored steam food that is cooked without oil. THis is the best suited food for all old people, patients and young kids. Preperation: 1. 1 cup Urad dal 2. 3-4 cups Idly rava. The more the rava is, the more it will be porus and looks like hotel idly. Grind Urad dal after soaking them for 4-5 hours. In grinder itself, por the rava and get them evenly mixed. Pour a laddle batter in Idly stand and boil it for 5-7 mins. Hot Idly ready!! This goes well with chutney,sambar or any PODI. So, Enjoy!!!

Pongali

Hello viewers,
Nellore side Pongali is very tasty. I normally do it whenever breakfast is not planned or for quick dinner. Pongali is very rich in protein and good for health and digestion.
Ingredients:
1. Pesara pappu 1 Cup
2. Rice - 1 Cup
3. Popu
4. Miriyalu
5. Salt

Preperation:
Pressure cook rice, pesarapappu and add popu to it.
 

Erra karam for Karam dosa and Idly,dosa and all breakfast recipes

Hello Viewers,
I thought of posting Errakaram today. I remember there used to be a small hotel in Nellore in balaji nagar and they are hailed from tamilnadu , Errakaram dosam made by them are used to be my all time favourite. My uncle used to bring whenever we go there for vacation. I could still feel the taste buds of that taste, though it is morethan 20 years that I had. But with multiple tries, I could succeed in bringing that taste back and my brother used to appreciate me for bringing the memories back with my Erra karam dosa. Its so simple and the secret is - this karam tastes wonderful the next day than first day. Fine, try it out and leave your feedback.
Ingredients :

1. Mirapakayalu - 10
2. Onion - 1 big
3. Salt to taste
4. Popu

Preperation: Grind mirapakayalu and onion and salt to a fine paste. Add popu to it. Keep it in fridge. Next day you can just spread it on dosa, your errakaram dosa is ready!!!

Taste it, you will never forget this taste and this can't be compared with any pizza,burger or any Chinese.....This dosa is of its own taste!!!

Mango Pulusu

Hello Readers,
Hope you all enjoyed nice summer with Yummy Mangoes. Nenu ikkada Nellore vantalu maatrame rastanandi anni rayatam nakistam ledu. Maa Jilla famous for Food kada. Today's dish with Mangoes.
Mamidi Palla Pulusu
The name looks yummy, for sure this will add extraordinary taste to your tongue. This recipe has been one of our favourites at home and has been cascaded from our ancestors. This is simple yet tasty and delicious.
Lets have a look at the ingredients. I am going to tell you this recipe for 2-3 persons.

1. Ripe Mango - 1Nos
2. Onions-1 Big chopped in small pieces
3. Chillies - 5-6
4. Jaggery - lemon size
5. Tamarind - lemon size
6. For seasoning - 1 Tbsp Oil,Mustar seeds,fenugreek seeds,1 slit red mirchi
7. Chille powder- 1 Tea Spoon
8. Salt to Taste
9. Turmeric - 1 pinch

Procedure:
First Wash Mango and peel it off, It would be good if the mango is little hard but ripe. It should be to soft when we touch it which gets mashed in pulusu.
Put kadai on low flame and add seasoning, when they splut, add Onions,Mirchi and let it be till onions becone transperant. Add Tamarind pulp water along with salt and chillipowder and turmeric
After 5 mins once pulusu is getting boiled, add Mango pieces. and put it in low flame for 10 mins. Add Jaggery and wait for 5 mins. Garnish with Kothimeera. Your Mango Pulusu is ready to serve. Needless to say, you wil become instant fan of this yummy pulush. This goes well with rice along with some papad.

Kaarapu Vankaya!!!!!!!

Introducing another tasty,yummy and delicious dish for spicy food lovers!!!!
My mom does this and even today, I wish I can repeat the same taste, but it tastes great when it is cooked by mom. We call it as "Operation Brinjal". Yes, they resemble in that name!
When I cook this at my inlaws place, the persons who hate brinjal in their house aswell ate this by asking for second time even. It tastes great! Lets see the process quickly and repeat this at your homes over weekend.

Ingredients: Very simple though!!
1. Green Brinjal -4
2. Oil-2 tsp
3. Red Mirchi - 10
4. Onion - 1 Big
5. Salt
6. Thread (to tie brinjals)

Process: Wash the Brinjals and apply some oil to it, just one Tsp is enough for all the brinjals. It is just to get it burnt quickly on flame.
One by one burnt it on high flame on gas stove and ensure that top layer is cooked properly. If you press the brinjal, you finger should feel the inside content.

Prepare the filling that needs to kept inside of brinjal.Ensure that this will not be very watery.
Grind the mirchi ,onion and slat in mixie jar softly, no need to add water, may be little you can add to get it mixed.

Remove the peel(black) on brinal and fill the filing inside and tie the brinjal tightly.
Repeat it for all brinjals. Put frying pan on gas stove and put 2 tsp Oil to it.
Add brinjals and put a lid on it. After 2 mins, fry them thoroughly once and then switchoff fire.
Yummy and tasty Operation Brinjals ready.
